These are great for kids, those on the ketogenic diet or low carb (you may want to reduce the honey and increase the swap it with more monk fruit, stevia or sweetener of your choice), SCD and GAPS peeps too!
Coconut Chocolate Peppermint Patties: makes twelve-ish
1/3 cup dried coconut chunks/shreds
1/3 cup coconut butter (buy it or make your own!)
1-2 tablespoons melted coconut oil
1 Tb raw honey
1-1.5 tsp WeLuvYa Sweet Sweetener or another sweetener of your liking–stevia, birch tree xylitol (
1 tsp peppermint oil
Pinch of salt 
Chocolate Coating:
2 Tb melted raw extra virgin coconut oil 
2 Tb melted raw cocao butter
1/3 cup raw cacao powder
3 Tb raw honey
1-2 tsp WeLuvYa Sweet Sweetener
Pinch of salt
Optional: 1/4 tsp cinnamon and cayenne
Optional: coarse sea salt as garnish (to kick it up a notch) 
For the filling:
1. Blend all of the ingredients until smooth.
2. Form into balls and pat into flattened patties.
3. Put into the refrigerator or freezer for 30 minutes or until hardened.
For the Chocolate Coating:
1.  Process all the ingredients from the second list together until smooth.
2.  Dip or drizzle or coat (whatever method you find gets your fingers the least chocolatey) the patties in the chocolate.
3.  Allow to harden in the refrigerator or freezer.
